The Origins: From Boston to the Slopes

The Waffle Cabin's journey began with Peter Creyf, the owner and founder. "The Waffle CabinTM is a concept that we started in May 1998. Originally it was called "Leo's - Gaufres de Liège" - a tribute to my tutor Leo Vermeulen in Antwerp, Belgium," says Creyf. The business started with a pushcart at Quincy Market in Boston in May 1998.

In December 1999, a pivotal opportunity arose at Killington Resort in Vermont during Christmas week. Tracy T., Creyf's contact, offered a chance to prove the concept. As Tracy T. put it: "I'll give you a chance to prove yourself during Christmas week, and if it won't work during that week, it will never work !".

The response was overwhelmingly positive. That same season, Chris Goss, the F&B director at Stowe, provided a similar opportunity at Stowe Mountain. And here too, the same thing happened... President's week was even bigger than our Christmas week trial and only reinforced what we had felt - this is a WIN-WIN-WIN ...

Expansion and Growth

All this led me to contact ski resorts. "We got a lucky break - Thank you Tracy Taylor !! - to set up a pop-up / test at Killington and within days, we know we had a winning formula here !", recalls Creyf. That same season, Chris Goss who was the F&B director at Stowe gave us that same opportunity and again, we immediately saw the success this could be.

The Waffle Cabins® grew to many resorts in New England, and learned a lot along the way as well, although it was a relatively easy growth - life was good and “quite easy”...
